I personally read slash because I see two guys (or sometimes girls) and think "hmm, they've got some chemistry.
I'll voraciously read fic for fandoms I'm not even in, provided it's long and h/c-filled enough, but when I write or ship a pairing, it's always because I think there's grounds for it in canon. And when I OTP, I consider the pairing canonical ^_^.
The only pairing I ever wrote just because I liked the idea of it and not because I thought there was any kind of canonical basis for it... was the Sharon/Winter Soldier in RR&R.
